I've always been partial to 9-24-72 (as it was my first, go figure...). It has a few flubs in it, but overall its good enough to get a good listening experience from.

Im gonna check out 11-19 as per sko's suggestions

Of course Grateful Dead Movie Sndtrk. has a nice one. Also the version on 9/26/72 from The Stanley Theatre in Jersey City is another one that comes to mind.

start with a source material and then listen to jerry and donna.

This one really captures that country feel:

Too bad sound quality kind of sucks...

bd nailed it.
The earlier-in-the-fall versions sound tentative to me; the band is clearly feeling their way through the performance of a new tune.
This performance however sounds extremely confident, and soulful. A great reading of a wonderful tune. As well as, of course, an absolutely tremendous performance all around. The Dark Star -> Stella Blue is sublime.

I'm one of the few who dig this tune..IMO the best is Hofheinz 11/19/72:
